In most cases, you cannot.
Nintendo has strict requirements for their games and requires a certain minimum firmware version to run it. So, if a game update requires a new firmware version than the one your Switch has, you must update to it in order to apply the game update. The only ways around that is to get the update without actually using a new firmware version: or, you could use the “Match version with local users” if another person in the immediate area has already received and is able to run the latest game update. But even then, you are using someone else’s console for the update which is also a risk and it does nothing if the new game update requires a new firmware version, not a newer game version.
I think those are basically your only options.
Keep in mind that most updates to the system require new firmware and they usually have the new versions available long before other update requirements to the games start going live.

It’s also worth paying attention to when the disconnections happen. If your internet drops mostly during the evening or when multiple people are streaming, gaming, or downloading files, your network may simply be overloaded.
Another thing I’d recommend is checking the cables connected to your modem and router. Loose or damaged cables can cause random connection drops that are easy to overlook.
If the problem continues for several days, contact your internet provider and ask them to test the line. Sometimes there are signal issues outside your home that only they can detect and fix.

Some time ago, I assisted a friend in fixing an LCD monitor that developed horizontal lines on the screen before they purchased another one. They were convinced the monitor was defective, but we started checking through the quick fixes (i.e.: Checking that both ends of the cable were connected) and upon checking the HDMI cable between the monitor and the computer, it was discovered that the HD-Mi cable was loose since their desk was recently rearranged. Once that Cable was secured, the lines vanished.
For this reason alone I recommend starting with simple fixes first. Check cable connections, reboot the computer and if possible, test another monitor with the same video Card and see if it works fine. If there were any issues with each fix, then it is worth pursuing driver and/or damage to the video card. Sometimes the simplest problem, turns out to be the cause of the overall problem.
